We knew that the perfect recipe was out there somewhere, it was just a matter of uncovering it.
1884 witnessed the first Montreal-style smoked meat being sold to the public. That was the beginning of a gastronomic love affair that never got old. However, after years of researching and experimenting with original recipes and traditional dry curing methods, it became clear to us that those methods had been neglected.
The high-quality ingredients associated with the original Montreal smoked meat had gradually diminished over the years due to production shortcuts, cost cutting and the introduction of unnecessary additives.
This is why we decided to turn back the hands of time and reintroduce the classic Montreal smoked meat experience to the world.
